I didn't know because I used AirPods, but my wife's low-cost Bluetooth earphones didn't automatically connect when she answered the phone.
When I get a call while listening to music, my iPhone is the default and my earphones don't hear anything.
I really don't understand, but Apple has kept this setting hidden.
